Chè sầu riêng nước cốt dừa trông giống món chè bơ hay bánh flan lắm. Vị chè ngọt dịu, hương sầu riêng thơm đặc trưng. Có thể dùng lạnh sẽ rất ngon. Tuy nhiên không nên ăn quá nhiều vì nóng cơ thể nhé!
2 lá gelatine ngâm vào nước đá lạnh 10-15 phút. Sầu riêng cho vào máy xay sinh tố cùng với 60ml sữa tươi, 50ml nước cốt dừa, 1 muỗng canh nước cốt chanh, 2 muỗng canh sữa đặc, 20g đường xay nhuyễn.
Cho 60ml sữa tươi vào 1 nồi nhỏ, hâm nóng, sau đó vớt lá gelatine cho vào hòa tan, rồi cho hỗn hợp này vào hỗn hợp sầu riêng khuấy đều. Đổ hỗn hợp này vào chén hay khuôn tùy thích. Lấy màng bọc thực phẩm bọc lại, cho vào ngăn mát tủ lạnh để khoảng 5 tiếng là chè sầu riêng đông.
Phần nước cốt: 100ml sữa cốt dừa, 3 muỗng canh sữa đặc cho vào nồi nấu sôi là tắt bếp. Khi ăn cho chè sầu riêng ra đĩa hoặc chén, chan nước cốt dừa vào cùng với ít mít thái sợi và thạch dừa là hoàn tất. Chè sầu riêng nước cốt dừa trông giống món chè bơ hay bánh flan lắm.
