Làm bột bánh xèo: cho 250ml nước cốt dừa, 200g bột gạo, 1/4 muỗng cà phê bột nghệ và dầu ăn, hành lá xắt nhỏ vào tô lớn, khuấy đến khi hỗn hợp hòa quyện vào nhau. Để bột nghỉ 30 phút.
Tôm tươi bó vỏ, bỏ chỉ đen, rửa sạch để ráo. Giá đỗ rửa sạch, để ráo. Làm nóng chảo với dầu ăn, cho tôm vào với chút muối rồi đảo đều đến khi tôm chín cả hai mặt thì cho giá đỗ vào xào đều. Tắt bếp để riêng.
Làm nóng chảo, phết một lớp dầu ăn thật mỏng lên khắp chảo không dính, khuấy đều bột, múc 1 muỗng bột cho vào giữa chảo, nhanh tay nghiêng và xoay chảo để bột tráng đều xung quanh chảo tạo thành lớp mỏng. Đến khi thấy cạnh bột cuộn lại, bột bánh không còn ướt thì cho tôm và giá xào vào, rắc thêm chút hành ngò rồi gập bánh lại để khoảng 1 phút thì lấy bánh ra dĩa. Làm như vậy cho đến khi hết nguyên liệu.
Làm nước mắm: chế 2 muỗng nước sôi, 2 muỗng canh đường, 1 muỗng canh nước mắm, 1 muỗng cà phê nước cốt chanh, khuấy đều rồi cho ớt tỏi băm nhuyễn vào khuấy đều. Xếp bánh ra dĩa cùng nước mắm, rau sống và thưởng thức.
